Delicious, Easy and Healthy Challah or Rolls

2 ounces yeast

3 pounds flour (sifted) (12 cups)

3 1/2 to 4 cups warm water (depending on if you use orange juice or not)

1/2 cup orange juice (optional)

4 Tbsps. Sugar

2 eggs

1/4 cup oil

Dissolve yeast in one cup lukewarm water with a bit of sugar until it bubbles well. Mix flour, sugar and salt. Add rest of ingredients. You can mix by hand for around 15 minutes or kneed on medium speed for 5 minutes.

Set aside and let rise in warm temperature for 1/2 hour to an hour. Work dough down and let rise for another 1/4 hour or until doubled in bulk.

Make challah or rolls as you please. Brush to with egg and add sesame seeds (optional).

Bake on 175 Fahrenheit (375 degrees) for 30 -60 minutes depending on the size of the challah or rolls until it appears well down.

You can turn it over and knock on the bottom, if you hear an echo or sounds hollow, it is done. Don’t over bake.
