Yummy Sugar-Free Muffin and Cake Recipes

2 cups flour
2 pk (20 gram) baking powder
½ teaspoon cinnamon (optional)
¼ cup canola oil
4 oz orange juice
1 egg
2 ¼ cups milk (1% milk)
2 cups bran flakes
1 bar 85% or 90% chocolate
2 heaping teaspoons cocoa (optional)

Put 2 cups of milk in a bowl with bran flakes and let sit for 3 minutes to soften (don’t leave it too long, so it does not become soggy).
Mix flour, baking powder and cinnamon well.
Add oil, orange juice and egg, and ¼ cup milk, mix well.
Cut chocolate bar into small pieces and add to mixture.

For chocolate muffins, add the cocoa to the mixture.

Put into muffin cups or bake at 175 Celsius 350 Fahrenheit for 20-30 minutes.

For a simpler option, put into a cake pan (you can make it into a marble or Browne cake) bake for about 30 minutes until a toothpick comes out clean.

UPDATED BIGGER CAKE VERSION

3 cups flour
21/2 pk (25 gram) baking powder
1/2 teaspoon cinnamon (optional)
1/2 cup canola oil
8 oz orange juice
1 egg
3 cups milk (1% milk)
3 cups bran flakes
2 heaping teaspoons’ cocoa (optional)

1 bar 85% or 90% chocolate (add to the top of the cake when its finished baking, allow the chocolate to melt while oven is hot, remove from over and spread chocolate evenly.

Bake for about 30 to 40 minutes, until a toothpick comes out clean.
