Kids’ Favorite Quick and Easy Cup Cake Recipes

I always loved bonding with the children through baking. Both boys and girls enjoy these activities. Although these are not healthy recipes, they are good for children’s emotional health. Here are quick and easy recipes that children enjoy. I have sent these mini cupcakes to simchas and everyone enjoys them. Many mothers packed them up to take home for their children as they are yummy, exciting, colorful, and easy thing to carry.

P.S. I never understood why people remove food from a simcha. The Bal Simcha invited guests, and they need enough food and desserts for everyone. Everything on the table is need for the guests. They want everyone to sit, relax and have a variety of good food. I used to see mothers standing at the sweet table and pack miniatures to take home for their children. Oftentimes, mothers promised their children that they will bring home goodies from the event if they behave well with the babysitter.

This is not a nice practice. If a mother wants to or needs to give her children something special in order for them to behave nicely while she is out, she should buy them a special treat beforehand, in order to give it to them after the simcha. Bringing a slice of cake from the simcha for your spouse is different and is usually OK. Of course, If you stay until the end of the simcha and the bal simcha offers you goodies to take home, then take it.

MINI WHITE CUPCAKES

2 sticks margarine (drop less) 2 cups sugar 4 eggs 3 cups flour 3 teaspoons baking powder 1 cup orange juice.

Bake for 15 to 20 minutes when a toothpick comes out clean.

Dip in baking chocolate and add any topping you like.

Note: if substitute is needed: 2 sticks margarine is equal to 1 cup oil.

BROWN MINI CUPCAKES

2 cups sugar 1 cup oil 4 eggs 2 Tablespoon vanilla sugar 2 cups flour 2 teaspoon baking powder 3/4 cup hot water 1/4 cup cocoa

Combine the sugar and oil. Mix in the eggs, one at a time. Add vanilla sugar backing powder and flour, mix until well combined. Dilute cocoa in hot water (optional) add to mixture and combine until smooth.

Bake at 350 for about 15 to 20 minutes until a toothpick comes out clean.

Dip in baking chocolate and add any topping you like.

EASY HAMANTASHEN OR SOFT COOKIES

2 eggs 1/2 cup oil 1/4 cup sugar 1/2 teaspoon vanilla extract mix together add 2 cups flour 1/2 teaspoon baking powder 1/4 teaspoon kosher salt For cookies add 1/2 cup chocolate chips (0ptional)

Make imminently, does not need to rise, and does not need refrigeration.

Roll out 1/4 inch thick with a 3-inch cookie cutter shape.

For hamantashen add one teaspoon filling of your choice (no more, or it will overflow).

For cookies, decorate with sprinkles or toppings

Bake on 350 for 10 to 12 minutes.
